Salmon Tail with Honey and Soy Glaze

Ingredients
 

Salmon Tail – big enough to feed 4 or (4 salmon fillets)

3 tablespoons good quality honey

3 tablespoons light soy sauce

1 Lime freshly squeezed

2 teaspoons French mustard

Olive Oil for cooking

(I use salmon tail because there are no bones in it, which makes it great for the kids)

Steamed Green Vegetables
Any Asian greens will do

Broccoli cut into florets

Green beans (top and tailed)

Sugar snap peas

Or any other greens you like

Method
  • In a small pan heat the oil over moderate heat and cook salmon for around 4 minutes on each side or until just cooked through.
  • Whisk together the honey, soy sauce, lime juice and mustard.  If the sauce is too thick add 1-2 tablespoons of water.
  • Transfer salmon to one big plate to serve in the centre of the table or on individual plates.
  • Add honey mixture to pan and simmer, stirring for 1 minute. Pour glaze over salmon.

Serve with new potatoes or on a bed of rice with a large selection of steamed green vegetables.

This is such an easy meal to prepare and it takes next to no time to get it on the table. I promise you there will be some very happy people sat around your dinner table. My boys absolutely love this meal.

Steaming is a great way to cook any vegetable, it helps to maintain all the nutrients, vitamins and all the other goodness that we are trying so hard to get out of our fresh vegetables. My steamer would have to be one of the most used items in my kitchen along with my citrus juicer and blender.
